Jimboy's Tacos unveils new look and menu

Jimboy’s Tacos celebrated the grand opening of its latest location in Woodland last night.

Though the spot at 2021 Bronze Star Drive had been operating for about five weeks, the evening marked the unveiling of Jimboy’s new look and menu. Future Jimboy’s locations will be designed in a similar fashion and old Jimboy’s will eventually be retrofitted to match.

With vintage elements and an overall retro-contemporary aesthetic, the design emphasizes Jimboy’s history with shout-outs to its Lake Tahoe beginnings, black-and-white photos of founder Jim “Jimboy” Knudson and proud displays of the new slogan, “The Original American Taco.”

“That’s really what we’ve always been,” said CEO Karen Knudson-Freeman, daughter of Jimboy. “Back in 1954, nobody even knew what a taco was.”

As for new menu items, the Woodland Jimboy’s features new salads, all-day breakfast, desserts, street fries, a surprisingly spicy vegetarian masala taco and a line of Tahoe Burritos. These griddled burritos contain whole beans, rice, red sauce and cheese with choice of protein and can also be ordered as a burrito bowl over greens.

Bonus: Jimboy’s will donate 20 percent of its proceeds on Wednesday, October 26, to the Woodland United Ways and on Thursday, October 27, to the Yolo County Food Bank in honor of the grand opening.
