Insight Coffee, Sun & Soil open at 16 Powerhouse

Finally, something is finished at 16 Powerhouse.

The LEED-certified development at 1615 16th Street has been under construction for, well, a long time. Today, its first business opened its doors: Insight Coffee Roasters with Sun & Soil Juice Company. It’s Insight’s first Midtown, third on-the-grid and fourth overall location, but its first with Sun & Soil. On this particular morning, it carried five of Sun & Soil’s juices—same flavors you already know, same recycled bottle program, same punch cards.

Per usual for Insight, this location is beautifull designed: minimalist, spacious and full of wood accents. There’s a long, wood community table as well as bar and outdoor seating. The enormous windows give the place plenty of natural light and views of Fremont Park.  

Still to come at 16 Powerhouse: a new and bigger Magpie Cafe and Orchid Thai Restaurant & Bar. The latter—with a hand-painted mural and modern light fixtures—looks closer to completion.
